Banana "Ice Cream" - aka "I'm in love"...


Soooo easy and soooo yummy! Funny thing is I don't ever typically like banana "flavored" anything except bananas or coconut! This was perfect after running around in the warm sun. I will make this all summer, for sure. Had to share this batch with Connor, then he came back wanting more!

Banana "Ice Cream"

1 banana (broken into about 4 pieces, frozen 1 day or more)
Coconut milk (original)
Vanilla extract

Break up a banana and freeze it in a ziploc for at least a day. Place in blender with coconut milk and dash of vanilla (I didn't measure either, sorry!). I'm sure if you used vanilla bean it'd be healthier, but close enough. Blend just until mixed, about 30 seconds. Voila!

I cannot stress how yummy, not overly sweet and refreshing this simple snack is....try it! Kids will love it too :)

So, how's it going Erin?

Just curious if you've been able to stick with it, and, if so, any results so far?

I have been watching what I eat. (Well, not today. I felt like I could not get full.) I've extremely cut back on dairy (meaning cheese - about the only dairy I eat).
I've cut way back on meat consumption.
I've actually exercised for 20/30 mins EVERY single day since I jumped ship. (Well, okay, not 2 days - but one of those was the Habitat for Humanity day and I was sore from that for 3 days!!!) But I think this is a huge accomplishment for me. I've done really well sticking to it! I'm "technically" 5 lbs. lighter than what I weighed before we started this diet, but I kinda fluctuate with those 5 lbs. all the time. I won't consider it real weight loss until the 10 lb. marker.

Black bean yum yum

After getting my finger attended to and after a discouraging conversation with our dad (he thinks this way of eating is too extreme) I was more determined not to give up. I finished my black bean soupy yum yum. My garlic was large since I was newly fearful of my finger-slicer of a knife, but can't wait to eat this for lunch tomorrow with my new dressing for my salad. Maybe I CAN do this...

- 1 can organic (lower sodium) black beans
- 2 or 3 cloves of garlic, minced or powder
- 1 onion, sliced
- 1 tomato, cubed
- mrs dash original, tomato basil to taste

Add enough water to cover the bottom of a medium pot. Heat and add onions and garlic to water saute. Add tomatoes, let cook on medium for 5 minutes. Add drained beans and season to taste. (i added lots of seasoning)

Simmer on low for 45 minutes. So easy!

I'm a quitter baby, so why don't ya kill me...

Ok. I give up. I am not totally giving up. I am still going to try to lose weight and eat healthier. I just don't like this. Maybe it's because I can't/don't cook. Maybe it's because I haven't been cooking a real "meal" at dinner. Maybe I'm just a loser. ;) But whatever it is, I just know that I don't want to live eating like this for the rest of my life. (yeah, I know after the six weeks you add some things, but I'm just not cut out for something this drastic.)

What I will continue doing is eating more fruits and veggies. Cutting out (at least most) meat. I'm going to stay off the coffee, although, I will probably drink green tea because it is good for you. I'll try to stay clear of sugar/salt - as much as I can - which means not adding any and being more conscious of it in things. I will also be DRAMATICALLY cutting back on grains, but I think some (healthy) ones are important. But compared to what I usually do, it will be way less. Really, I'll just be watching what I eat - and trying to eat healthy. I'm going to stick with the smoothies - especially trying to incorporate the green smoothies more. I am also going to try to exercise for 30 mins every day. I'd like to keep blogging as a way to keep track and keep myself accountable, but I will just be doing my own thing. Good luck Erin.

Withdrawl?

So it may be the weather, but I woke up in the middle of the night with worst itchy eczema ever and cold sweats! My hand has never been so itchy! Otherwise, I definitely am feeling better off of caffeine, my heart seems to race less. I had no idea it affected me that much. Just thought it was my thyroid problem.

First day of diet at work, forgot my beans! Panicking. Am going to try not to cheat. Have a huge salad and some fruit.
